Make Ahead Mashed Potatoes

- 8 lb. potatoes, peeled
- 1 can (13 3/4 oz.) chicken broth
- 1/2 c. butter or margarine, softened
- 1 c. light sour cream
- 1 tsp. poultry seasoning
- paprika
- 1 tsp. salt
- 2 tsp. salt
Directions

1Butter 13 x 9-inch baking dish.

2Set aside.

3Combine cut potatoes, 1 teaspoon salt and water to cover in large Dutch oven. Bring to a boil, reduce heat and simmer until tender.

4Drain. Return potatoes to pot with broth, butter, sour cream, poultry seasoning and 2 teaspoons salt.

5Beat with mixer until smooth. Spread potatoes in baking dish and sprinkle with paprika.

6Cover and refrigerate.

7Bake at 350° for 30 minutes until puffed and heated through.

8May add French fried onions before baking.
