Make Ahead Mashed Potatoes

  • 3 lb. medium potatoes, pared
  • 1/4 c. sour cream
  • 4 Tbsp. butter
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. packaged bread crumbs
  • 1 Tbsp. butter, melted

    Cook potatoes until tender.

    Drain.

    Mix potatoes, sour cream, butter, salt and pepper in a large bowl.

    Beat at a low speed until fluffy.

    Pile lightly into a buttered 2-quart casserole. Cover and refrigerate overnight.

    Bake covered at 325° for 1 hour. Toss crumbs in melted butter.

    Sprinkle over potatoes.

    Continue baking for 30 minutes uncovered.
