Make Ahead Mashed Potatoes

  • 8 large potatoes, pared
  • 1 (8 oz.) pkg. cream cheese
  • 1/4 c. sour cream
  • salt and pepper to taste
  • pats of butter
  • paprika

Directions

    Boil potatoes in salt water until tender.

    Drain and mash. Add cream cheese, sour cream, salt and pepper, mixing well.

    Place in greased 2-quart casserole.

    Top with pats of butter.

    Cover. Potatoes may be stored in refrigerator for several days.

    Before baking, sprinkle with paprika and bake uncovered in a 350° oven for 30 to 35 minutes or until heated through.
