  • about 7 large potatoes, peeled and boiled
  • 1 stick reduced-calorie margarine
  • 1 (8 oz.) container low or no fat sour cream
  • 1 c. low-fat (2%) milk

    Mash all ingredients.

    Place in casserole dish and bake for 30 minutes.

    You might wish to sprinkle finely chopped green onions on top of casserole.

    This dish can be made a day ahead and refrigerated.

    Bring back to room temperature before baking.

    It can be frozen, thawed and baked and will taste fresh made.

    Bake at 350° until hot and slightly brown.
