Make Ahead Vegetable Stuffing

- 1/2 c. onions or less
- 1/2 c. celery
- 4 Tbsp. butter or margarine
- 1 (17 oz.) can cream-style corn
- 1/2 c. water
- 1 tsp. poultry seasoning
- 1/8 tsp. pepper
- 1 pkg. or 3 c. herb seasoning stuffing mix
- 3 slightly beaten eggs
- 1/2 c. melted butter or margarine
Directions

1In a saucepan, cook onion and celery in butter until tender but not brown.

2Add corn, water, poultry seasoning and pepper.

3Bring to a boil.

4Pour over stuffing mix and toss lightly.

5Stir in eggs. Put in a baking dish and pour melted butter over.

6Bake at 375° for 25 minutes.

7Make ahead and refrigerate, if desired.

8Very good.
