Manchupa(Samp & Beans)

Ingredients

  • 3 c. samp
  • 2 lbs. short ribs - pork (pork chops or country ribs)
  • 1 lb. linguicia cut into 1 inch pieces
  • 2 onions diced
  • 1 tsp. black pepper
  • 2 (10 )oz. pkg. kale (or fresh parboiled kale)
  • 1 Tbsp. paprika
  • 1 bay leaf
  • 1 Tbsp. oil
  • salt to taste
  • 2 cans of butter beans

    Rinse out samp.

    Place samp in a 12 quart pot half filled with water and bay leaf.

    Bring to a boil.

    Turn down and let simmer for 1 hour.

    Add kale, linguicia, short ribs, and salt.

    Saute onions in oil.

    Add paprika and black pepper to onions.

    Add onion mixture to pot; add enough water to cover the vegetables.

    Bring pot up to a boil; lower heat and allow pot to simmer for at least 3 1/2 -4 hours.

    During the last 1/2 hour of cooking add cans of butter beans (Juice and all).
