Mandarin Chicken

  • 2 1/2 lb. fryer, cut up
  • 1/2 c. flour
  • 2 tsp. salt
  • 1 tsp. paprika
  • 1/4 tsp. pepper
  • oil (for frying)
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1 Tbsp. water
  • 1/4 c. flour
  • 1/2 c. water
  • 1 c. pineapple juice
  • 1 c. orange juice
  • 2/3 c. pineapple chunks
  • 1 small can mandarin oranges
  • 1/2 c. slivered almonds

Directions

    Rinse the chicken and pat dry.

    Combine flour, salt, paprika and pepper in a sturdy bag.

    Put chicken in bag and shake to coat. Heat about 1/2-inch oil in a heavy frying pan.

    Brown chicken on both sides, frying about 15 to 20 minutes, uncovered.

    Sprinkle chicken with cloves and nutmeg.

    Add 1 tablespoon water to the pan and cover, cooking over low heat another 20 minutes.
