Mandarin Chicken

  • 3 whole broiler-fryer chicken breasts, halved
  • 1 tsp. salt
  • 1/2 tsp. ground pepper
  • 1/4 c. corn oil
  • 1 (11 oz.) can mandarin orange segments, drained (1/2 c. juice reserved)
  • 1/4 c. soy sauce
  • 1 Tbsp. flour
  • 1 c. crushed pineapple
  • 1 tsp. onion salt
  • 1 tsp. Accent
  • 1 tsp. prepared mustard
  • 1 tsp. cider vinegar
  • 1/4 tsp. garlic powder
  • 1/2 c. diced green pepper

Directions

    Sprinkle breasts with salt and pepper.

    Heat corn oil in frypan over medium heat.

    Place chicken in pan, skin side down; saute until golden brown.

    In a bowl, mix together orange juice, soy sauce and flour until smooth.

    Stir in pineapple, onion salt, Accent, mustard, vinegar and garlic powder.

    Place browned chicken in large, shallow baking dish; pour sauce over chicken.

    Cover; bake in a 350° oven for 1 hour, basting occasionally.

    Add orange segments and green pepper; continue baking 5 minutes, or until chicken is done.

    Serve sauce over rice.
