- 3/4 c. water
- 1/2 c. chopped onion (1 medium)
- 1/2 c. chopped celery (1 stalk)
- 1 clove garlic, minced
- 1 (14 1/2 oz.) can low sodium tomatoes, cut up
- 1/2 c. long grain rice
- 1/2 tsp. sugar
- 1/2 tsp. chili powder
- 1/8 tsp. salt
- 1/8 tsp. pepper
- few dashes bottled hot pepper sauce
Directions

1In a large skillet, stir together the water, onion, celery and garlic.

2Bring to boiling; reduce heat.

3Cover and simmer for 2 minutes or until the vegetables are tender.

4Do not drain.

5Stir in the undrained tomatoes, rice, sugar, chili powder, salt, pepper and hot pepper sauce.

6Return to boiling; reduce heat.

7Cover and simmer for 20 to 25 minutes or until the rice is tender and most of the liquid is absorbed.
