Mango-Blueberry Salsa

Ingredients

  • 1 cup fresh mango (ripe, but firm) coarsely chopped
  • 1 cup fresh blueberries, washed
  • 2 serrano chiles, seeds and ribs removed and finely minced
  • 1/2 cup red onions, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup seasoned rice vinegar
  • 1/4 teaspoon ground black pepper

    1. Prepare at least 1 hour prior to serving.

    2. In a nonreactive bowl, mix all ingredients except the blueberries.

    3. Add blueberries to the mix and carefully turn in with a spatula to complete mixing. Take care not to break the blueberry skins.
