- 1 c. sugar
- 2 eggs
- 2/3 c. vegetable oil
- 1 tsp. vanilla
- 1 c. pureed mango
- 1 1/4 c. flour
- 1 1/4 tsp. baking soda
- 1 1/4 tsp. cinnamon
- 1/4 tsp. salt
Directions

1Cream together the sugar, eggs, oil, vanilla and mango.

2Mix dry ingredients and add to creamed mixture.

3At this point, if desired, you may add 1/4 cup raisins, 1/4 cup shredded coconut and 1/4 cup chopped nuts.

4Mix all together and pour into greased and floured loaf pans.

5Bake at 350° for 45 to 50 minutes.
