Ingredients

  • 2 c. flour
  • 1 1/2 c. light brown sugar
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 3 eggs
  • 1/2 c. corn oil (must use)
  • 1/2 c. melted butter
  • 1/4 c. chopped walnuts (or nut of your choice)
  • 1/2 c. raisins
  • 1/2 c. shredded coconut
  • 2 c. chopped mango

Directions

    Preheat oven at 350°.

    Mix all ingredients all at once in large mixing bowl.

    Mix until well blended.

    Pour into two bread pans coated with Pam spray.

    Bake for one hour, or until knife comes out clean.
