  • 3/4 cup milk
  • 2/3 cup plain flour
  • 2 eggs
  • 150g PHILADELPHIA Mango Light Cream Cheese
  • 400g pie apple Safeway 1 lb For $0.99 thru 02/09
  • 30g butter
  • 2 teaspoons oil
  • 170g can passionfruit pulp
  • fresh sliced pineapple, to serve

Directions

    Whisk together the flour, milk and eggs until smooth.

    Chill for 20 minutes.

    Combine Philly* and apple.
  4. 4
    Heat 1 teaspoon of butter and 1/2 teaspoon oil in a non-stick frying pan over medium heat.

    Pour 1/4 of the batter into the pan and cook pancake until lightly browned, then turn and cook other side, remove.

    Repeat with remaining butter, oil and batter.

    Spread 1/4 of the Philly* mixture onto each pancake, leaving a 2cm edge uncovered.

    Fold in sides to make a parcel.

    Add remaining butter to pan and cook both sides of each parcel for 1-2 minutes to heat through.

    Serve drizzled with passionfruit pulp and alongside fresh pineapple.
