Mango Chia Coconut Pudding

  • 1 cup Coconut Milk
  • 1 cup Greek Mango Or Coconut Yogurt
  • 1 Tablespoon Honey Or Agave
  • 1/4 cups Chia Seeds
  • 1 cup Diced Mango
  • Toasted Coconut And Mint Leaves, For Garnish (optional)

Directions

    Gently whisk coconut milk, mango yogurt and agave. Mix in chia seeds and let sit for 30 minutes on the counter. Stir once again, cover and refrigerate for at least 2 hours or preferably overnight.

    Scoop into small individual bowls and top with diced mango. If desired, add toasted coconut and a mint leaf for garnish.
