Ingredients
- 1 seeded and chopped lemon
- 1 minced garlic clove
- 2 1/4 c. brown sugar
- 1 1/2 c. raisins
- 3/4 c. chopped crystallized ginger
- 1/4 tsp. cayenne pepper
- 2 c. cider vinegar
- 5 1/2 c. chopped under-ripe mangoes
- 1 1/2 tsp. salt
Directions

1Put lemon in an open enamel or stainless steel kettle.

2Add sugar, vinegar, garlic, salt and cayenne pepper.

3Boil for 30 minutes.

4Stir frequently.

5Add mangoes, raisins and ginger. Simmer until fruit is tender, but not mushy (about 30 minutes). Ladle boiling chutney into sterilized jars.

6Cap with two piece screw band lids.

7Makes about 3 pints.
