Mango Chutney

  • 1 seeded and chopped lemon
  • 1 minced garlic clove
  • 2 1/4 c. brown sugar
  • 1 1/2 c. raisins
  • 3/4 c. chopped crystallized ginger
  • 1/4 tsp. cayenne pepper
  • 2 c. cider vinegar
  • 5 1/2 c. chopped under-ripe mangoes
  • 1 1/2 tsp. salt

Directions

    Put lemon in an open enamel or stainless steel kettle.

    Add sugar, vinegar, garlic, salt and cayenne pepper.

    Boil for 30 minutes.

    Stir frequently.

    Add mangoes, raisins and ginger. Simmer until fruit is tender, but not mushy (about 30 minutes). Ladle boiling chutney into sterilized jars.

    Cap with two piece screw band lids.

    Makes about 3 pints.
