- 1 12 cups water
- 1 cup couscous
- 13 cup orange juice
- 14 cup scallion, thinly sliced
- 14 cup mango, finely diced
- 2 teaspoons red bell peppers, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 tablespoon rice wine vinegar
- black pepper
Directions

1In a medium saucepan, bring the water to a boil.

2Add a pinch of salt and the couscous.

3Remove from the heat, cover; fluff with a fork after 10 minutes.

4Transfer the couscous to a glass bowl.
