Mango-Ginger Sorbet

Ingredients

  • 1 cup water
  • 1/2 cup sugar, or to taste
  • 2 cups diced fresh mangos (about 1 1/2 mangos)
  • Juice of 1 lime
  • 1 Tbs. grated fresh ginger, or to taste
  • 10 oz. container frozen apple juice
  • 3 Tbs. mango juice concentrate, optional
  • Shredded lime zest for garnish

Directions

    Combine water and sugar, and cook over medium heat until sugar dissolves and mixture turns slightly syrupy.

    Combine sugar water and diced mangos in container of blender and process for 3 to 4 seconds; the mixture should still retain some mango texture.

    Combine all ingredients in large mixing bowl and stir to combine well.

    Pour mixture into ice cream freezer container and churn according to manufacturers directions.

    When firm, scoop mixture into container, cover, and freeze for 30 minutes, if needed to firm.

    To serve, garnish each portion with lime zest.
