Mango Guacamole

  • 4 whole Hass Avocados, Halved, Seeded And Scooped Out
  • 2 whole Mangoes, Diced
  • 1 whole Jalapeno, Seeds Removed, Diced
  • 1 clove Garlic, Grated
  • 1/2 whole Red Onion, Diced
  • 1 whole Lime, Juiced
  • 1 Tablespoon Coconut Milk, Or More To Taste (I Used About Twice The Amount)
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Cumin
  • Pepper To Taste
  • 1 Tablespoon Cilantro, Roughly Chopped

Directions

    Add the avocados to a serving bowl.

    Mash with a fork until it reaches the consistency you desire.

    Add mangoes, jalapeno, garlic, and red onion and lightly mix, trying not to break up the mango pieces.

    Add the lime juice, coconut milk, salt, cumin, pepper and cilantro and mix.

    Taste the guacamole with a chip and adjust seasonings as desired.

    Let flavors meld in the fridge for about an hour.

    Serve with tortilla chips!
