- 4 oz beef tips
- 1/4 cup rice
- 1/4 cup mango
- 1/8 cup green onion
- 1/2 habenero pepper
- 2 slice tomato
- 1 1/2 tbsp red pepper
- 1 tbsp sour cream
- 1/4 tsp garlic powder
- 1/8 tsp onion powder
Directions

1Bring pot of water to rolling boil.

2Add rice, and cook for 15-20 minutes until soft.

3Wash veggies.

4Skin mango, and dice 1/4 cup.

5Dice green onion, tomato, and habenero pepper.

6Add to blender, along with garlic powder, onion powder, and 2 pinch salt.

7Pulse until desired salsa texture is reached, adding water as needed to thin.

8In pan over medium heat, cook beef to 155F.

9Season to taste with salt and black pepper.

10When salsa is done, remove from blender and hand-mix in sour cream.

11Set aside.

12When rice is finished, remove from heat and drain water.

13Plate, as season with salt lightly.

14Spread salsa over rice, and cover with beef tips.

15Garnish with green onions and red pepper.
