- 2 cups sieved mango puree
- 2 tablespoons lime juice
- 14 cup sugar
- 12 cup water
- 1 egg white
Directions

1Mix the mango puree with the lime juice.

2Simmer the sugar and water toghether for 5 minutes to make a syrup.

3Cool.

4Add to the mango puree, mixing thoroughly.

5Beat the egg white until it stands in peaks.

6Fold into the mango mixture.

7Freeze until firm, about 3 hours in freezer ice trays.

8Every half hour during the freezing process, stir the mixtur, scraping into the center the ice crystals that form around the edge of the tray.

9The finished ice should have a snowy texture.
