Mango, Passion Fruit And Lime Jam

  • 4 1/3 lbs mangoes, peeled, pitted and finely chopped
  • 1/2 cup lime juice
  • 1 1/2 lbs granulated sugar (approximately)
  • 8 None passion fruits, pulp scooped out
  • 2 tbsp finely grated lime peel

Directions

    Combine mangoes and lime juice in large saucepan. Bring to a boil. Reduce heat to low; simmer, covered, for 20 mins, or until mango is soft.

    Place a plate in the freezer. Measure fruit mixture; allow 6 oz sugar for each 1 cup fruit mixture. Return fruit mixture and sugar to pan. Stir on high heat, without boiling, until sugar has dissolved. Bring to a boil; boil, uncovered, without stirring, for 15 mins, or until a spoonful of jam placed on the cold plate wrinkles when you push your finger through it. Stir in passion fruit pulp and lime peel.

    Pour hot jam into hot sterilized jars; seal immediately. Label and date jars when cold. Store in a cool dry place. Once opened, store in the refrigerator.
