  • 2 1/2 cups firm-ripe mangoes, peeled and cut into 1/2-inch cubes
  • (hint: find mangos in jar at T Js any season-much easier)
  • 1/4 cup red bell pepper, cut into 1/4-inch dice
  • 2 tablespoons cilantro, cut into 1/4-inch dice
  • 1 tablespoon chopped fresh jalapeno including seeds (from 1 chile)
  • 1/2 teaspoon grated lime rind
  • 2 tablespoons lime juice

Directions

    Toss together mangoes, bell pepper, jalapeno pepper,cilantro, grated lime, lime juice-cover and chill 1 hour.
