Mango Salsa

  • 2 tablespoons olive oil
  • 1 12 cups yellow onions, diced
  • 2 teaspoons ginger, peeled and minced
  • 1 12 teaspoons garlic, minced
  • 2 mangoes, ripe, peeled, seeded and small-diced
  • 13 cup orange juice, freshly squeezed
  • 2 teaspoons brown sugar
  • 1 teaspoon kosher salt
  • 12 teaspoon black pepper, freshly ground
  • 1 -2 teaspoon jalapeno pepper, minced
  • 2 teaspoons mint leaves, minced

Directions

    Saute the olive oil, onions and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent.

    Add the garlic and cook for 1 more minute.

    Add the mangos; reduce the heat to low and cook for 10 more minutes.

    Add orange juice, brown sugar, salt, pepper and jalapenos; cook for 10 more minutes, or until the orange juice is reduced, stirring occasionally.

    Remove from heat and add the mint.

    Serve warm, at room temperature or chilled.
