  • 1 shallot finely minced
  • 1 ounce butter
  • 2 cups mango Puree
  • 1 piece star anise
  • 1 cup brown rum or Brandy
  • 1 liter demi-glace
  • 1 teaspoon nutmeg
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper

Directions

    Sautee shallots in butter until caramelized.

    Add mango puree, rum and star anise

    Allow to simmer until reduced by half

    Add demi-glace and simmer for about 15 minutes

    Add salt, nutmeg and pepper to taste.
