- 1 ounce butter
- 2 cups mango Puree
- 1 piece star anise
- 1 cup brown rum or Brandy
- 1 liter demi-glace
- 1 teaspoon nutmeg
- 1 teaspoon salt or to taste
- 1 teaspoon black pepper
Directions

1Sautee shallots in butter until caramelized.

2Add mango puree, rum and star anise

3Allow to simmer until reduced by half

4Add demi-glace and simmer for about 15 minutes

5Add salt, nutmeg and pepper to taste.
