  • 14 manicotti noodles, cooked as directed, drain and cool
  • 1 (24 oz.) carton fat-free cottage cheese
  • 1 pkg. chopped frozen spinach, cooked and well drained
  • egg substitute to equal 2 eggs (two real eggs add fat)
  • 3 Tbsp. parsley
  • 6 Tbsp. Parmesan cheese
  • dash of salt
  • 1 large bottle Prego spaghetti sauce

Directions

    Combine cottage cheese, spinach, egg substitute, parsley, Parmesan cheese and salt.

    Fill noodles with mixture.

    Spray two 9 x 13-inch pans with Pam and line stuffed noodles in the pans.

    Top with Prego.

    Bake in 350° oven for 35 minutes.

    Remove and cool 10 minutes before serving.

    Leftovers can be frozen and reheated later.
