- 14 manicotti noodles, cooked as directed, drain and cool
- 1 (24 oz.) carton fat-free cottage cheese
- 1 pkg. chopped frozen spinach, cooked and well drained
- egg substitute to equal 2 eggs (two real eggs add fat)
- 3 Tbsp. parsley
- 6 Tbsp. Parmesan cheese
- dash of salt
- 1 large bottle Prego spaghetti sauce
Directions

1Combine cottage cheese, spinach, egg substitute, parsley, Parmesan cheese and salt.

2Fill noodles with mixture.

3Spray two 9 x 13-inch pans with Pam and line stuffed noodles in the pans.

4Top with Prego.

5Bake in 350° oven for 35 minutes.

6Remove and cool 10 minutes before serving.

7Leftovers can be frozen and reheated later.
