  • 1 tspn whole black peppercorns
  • 6 whole cloves
  • 4 allspice berries
  • 3 juniper berries
  • 1/3 cup kosher salt
  • 2 apple cider
  • 1/2 cup maple syrup
  • 1/3 cup brown sugar
  • 6 garlic cloves
  • 6 thyme sprigs

Directions

    Toast 1st 4 spices over medium heat about 2 minutes.

    Add salt, apple cider, syrup, sugar garlic and thyme in saucepan , bringing to a simmer.

    Add 3 cups cold water and pour in pan or bag over pork.

    Refrigerate 6-8 hours.
