  • 4 chicken breasts or 8 thighs
  • 8 oz. maple syrup
  • 1 Tbsp. oil
  • 2 oz. wine vinegar
  • 1 (4 oz.) can tomato puree
  • 2 tsp. curry powder
  • 1 tsp. marjoram
  • 1 Tbsp. soy sauce
  • salt and pepper
  • 4 cloves garlic
  • 2 Tbsp. raisins
  • 2 oz. mushrooms
  • 1 medium onion
  • 2 oz. almonds
  • 1 green bell pepper
  • 2 celery stalks
  • 4 oz. sherry

Directions

    Mix syrup, oil, wine vinegar, tomato puree, sherry, soy sauce, curry powder, marjoram, garlic, salt and pepper together. Put chicken in 2-quart casserole; pour mixture over chicken. Cover; let sit for three hours at room temperature.

    Then add remaining ingredients that have been chopped together.

    Place in uncovered casserole and bake in a 300° oven for 1 hour.
