Maple Upside-Down Cake

- 3 Tbsp. butter or margarine
- 1 c. maple sugar
- 1 c. pineapple chunks
- 3 eggs, separated
- 1 c. sugar
- 1/4 c. milk
- 1 tsp. lemon extract
- 1 c. sifted flour
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
Directions

1Melt butter in bottom of 8-inch round cake pan.

2Mix in maple sugar.

3Arrange pineapple chunks to cover bottom of pan.

4Mix beaten egg yolks with sugar; add milk and extract, then dry ingredients, sifted together.

5Fold in stiffly beaten egg whites. Pour batter over pineapple.

6Bake in moderate oven at 350° about 45 minutes.

7Invert and serve out in wedges, garnished with whipped cream.

8Makes 6 servings.
