Maple Veggie Mashed Potatoes

Ingredients
- 2 quarts water
- 12 lb turnip, peeled and cut into 1-inch cubes
- 5 -6 medium yukon gold potatoes, cut into 1-inch cubes
- 14 medium cauliflower head, cut into 1-inch cubes
- 2 teaspoons olive oil
- 1 tablespoon maple syrup
- 12 teaspoon salt
- 12 teaspoon black pepper
- 12 cup unsweetened soymilk
Directions

1Fill a large saucepan with 2 qt of water.

2Bring to a boil.

3Add turnips, reduce heat to medium and cook for 15 minutes.

4Add potatoes, return to simmer and cook another 5 minutes.

5Add cauliflower and cook for another 15 minutes or until all vegetables are tender.

6Drain vegetables and mash.

7While mashing add olive oil, maple syrup, salt, and pepper.

8Heat soymilk in microwave until hot and pour into vegetable mixture and continue to mash.
