Maple Walnut Cream

- 1 c. real maple syrup
- 2 c. milk, divided
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 eggs, lightly beaten
- 1 c. finely chopped walnuts
Directions

1In the top of a double boiler over boiling water, scald syrup and 1 3/4 cups milk.

2Combine cornstarch, salt and remaining milk. Gradually add to the syrup mixture.

3Cook and stir until thickened, about 25 minutes.

4Add a small amount to eggs.

5Return all to pan and cook for 5 minutes.

6Pour into serving dishes and sprinkle with walnuts.

7Cool.

8Yields 6 servings.
