Maple Walnut Squash Puree

Ingredients
- 12 c. cubed, peeled squash
- 3 Tbsp. butter
- 3 Tbsp. maple syrup
- 3/4 tsp. salt
- 1/4 tsp. nutmeg and pepper
- 1/4 c. chopped walnuts
Directions

1In a large pot of boiling salted water, cook squash for 25 minutes, or until tender; drain.

2Puree in blender, or by hand, until smooth.

3Blend in maple syrup, butter, salt, nutmeg and pepper.

4Spoon into shallow, greased 8-cup casserole or baking dish.

5Bake at 400°

6for 25 minutes.

7Serve immediately garnished with walnuts.
