- 14 cup dry sherry
- 4 cups fresh corn kernels
- 1 cup heavy cream
- 1 teaspoon Tabasco sauce

- 12 cup scallion, thinly sliced
Directions

1Saute bacon in large saute pan until crisp.

2Pour off all but one Tbsp of drippings.

3Add bell pepper and onion and cook until soft.

4Deglaze with sherry until nearly evaporated.

5Stir in corn, cream, and Tabasco and simmer until thickened.

6Season with salt and pepper and then stir in the scallions.
