  • 4 slices thick-sliced bacon, diced
  • 34 cup red bell pepper, diced
  • 12 cup onion, diced
  • 14 cup dry sherry
  • 4 cups fresh corn kernels
  • 1 cup heavy cream
  • 1 teaspoon Tabasco sauce
  • salt
  • pepper
  • 12 cup scallion, thinly sliced

Directions

    Saute bacon in large saute pan until crisp.

    Pour off all but one Tbsp of drippings.

    Add bell pepper and onion and cook until soft.

    Deglaze with sherry until nearly evaporated.

    Stir in corn, cream, and Tabasco and simmer until thickened.

    Season with salt and pepper and then stir in the scallions.
