  • 1 cup graham cracker crumbs
  • 3 tbsp. sugar
  • 3 tbsp. butter, melted
  • 1-1/2 lb. cream cheese, softened
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 3 eggs
  • 2 squares unsweetened baking chocolate, melted

    Heat over to 350F.

    Mix crumbs, sugar, and butter.

    Press into bottom of 9-inch springform pan.

    Bake 10 minutes.

    Increase temperature to 450F.

    Beat cream cheese, sugar, and vanilla at medium speed with electric mixer until well blended.

    Add eggs, 1 at a time, mixing well after each addition.

    Blend chocolate into 1 cup of the batter.

    Spoon plain and chocolate batters alternately over the crust and run knife through batters several time to marble.

    Bake 10 minutes.

    Reduce over to 250F and continue baking for 30 minutes.

    Turn oven off and let cake cool inside oven for 2 hours.

    Loosen cake for rim of pan.
