- Roux Recipe
- 3 to 4 lb. shrimp or chicken
- 1 bunch green onions
- 1 small yellow onion
- 2 stalks celery
- 3 to 4 bay leaves
- 1 large pkg. frozen okra or 2 lb. fresh okra
- 1 can whole tomatoes, cut up
- salt and pepper to taste
Directions

1Once roux is brown, transfer roux from skillet to deep pot. While heating, add green onions, onion, celery and okra to roux and saute for 10 to 15 minutes.

2Add 2 1/2 quarts water and tomatoes.

3Add shrimp or chicken and 3 to 4 bay leaves.

4Cook 1 hour.

5Serve over steamed rice.
