Marinated Artichokes

Ingredients

  • 1/2 cup balsamic vinegar
  • 1/2 cup champagne vinegar
  • 1/2 cup lemon juice, fresh
  • 1 1/2 cup olive oil
  • 1/4 tsp sugar
  • 2 tbsp thyme, fresh chopped
  • 1 tbsp oregano
  • 1/2 tsp red pepper flakes
  • salt and ground pepper to taste
  • 1 red onion, medium chopped
  • 8 large garlic cloves, sliced thin
  • 6-8 artichokes
  • 1/3 cup parmeasan cheese

Directions

    1. Mix all ingredients except artichokes

    2. Peel stems and trim leaves of artichokes. Steam or boil 25 minutes.

    3. Cut artichokes in half starting at the bottom. Cut out choke.

    4. Layer artichokes in large bowl cut side up.Top with marinade and refrigerate up to 24 hours.

    5. Drain artichokes, reserving marinade.

    6. Grill over hot grill until just charred, about 15 minutes.

    7. Top with a little marinade and lots of fresh parmeasan. Serve.
