- 2 tablespoons fresh basil, chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/8 teaspoon pepper
- 1 lb fresh asparagus
- 1/3 cup chopped tomato
Directions

1Mix basil, oil, vinegar, salt, sugar and pepper. Set aside.

2Cut ends off asparagus.

3Cook asparagus in a large pot of simmering water for 4 minutes.

4Drain and put in an ice bath.

5Remove asparagus to a platter and top with chopped tomato.

6Pour vinaigrette on asparagus.

7Chill until ready to serve.
