Marinated Asparagus

Ingredients

  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon pepper
  • 1 lb fresh asparagus
  • 1/3 cup chopped tomato

Directions

    Mix basil, oil, vinegar, salt, sugar and pepper. Set aside.

    Cut ends off asparagus.

    Cook asparagus in a large pot of simmering water for 4 minutes.

    Drain and put in an ice bath.

    Remove asparagus to a platter and top with chopped tomato.

    Pour vinaigrette on asparagus.

    Chill until ready to serve.
