Marinated Asparagus

  • 1/2 c. olive oil
  • 1/2 tsp. minced garlic
  • 2 Tbsp. chopped dill
  • 1 tsp. salt
  • 1/8 tsp. white pepper
  • 12 medium mushrooms, sliced
  • 2 cucumbers
  • 3 tomatoes
  • 1 lb. asparagus

Directions

    Briefly steam and cool the asparagus.

    Mix together olive oil, garlic, dill, salt and pepper in a large bowl. Cut stems from the mushrooms and slice.

    Peel, seed and slice the cucumbers.

    Peel and quarter the tomatoes.

    Place all the vegetables in the bowl. Cover and refrigerate for 24 hours.

    Drain the oil and arrange on chilled platter.
