Marinated Bean Salad

Ingredients

  • 1/2 cup vinegar
  • 3/4 cup sugar
  • Salt and pepper to taste
  • 2 cups (1 lb. can) cut wax beans
  • 2 cups (1 lb. can) cut green beans
  • 2 cups (1 lb. can) kidney beans
  • 1/2 cup raw onion, thinly sliced into rings
  • 1/2 cup oil
  • 1/2 cup chopped green pepper

Directions

    Combine vinegar and sugar in a saucepan. Heat until sugar is dissolved. Cool and add salt and pepper to taste.

    Drain beans to remove juices. Combine remaining ingredients. Marinate with vinegar/sugar mixture several hours or overnight. Kept under refrigeration, this salad will remain good for a week. Serves 6.
