Marinated Bean Salad

Ingredients

  • 14-1/2 ounces, weight Canned Green Beans, Rinsed Well
  • 15 ounces, weight Canned Yellow Beans, Rinsed Well
  • 15 ounces, weight Canned Red Kidney Beans, Rinsed Well
  • 15 ounces, weight Canned Garbanzo Beans, Rinsed Well
  • 1/2 whole Red Onion, Sliced And Separated Into Rings
  • 1 whole Green Pepper, Seeds And Ribs Removed, Chopped Into Chunks
  • 1/2 cups Cider Or Red Wine Vinegar
  • 1/2 cups Salad Oil
  • 3/4 cups Sugar
  • Pepper To Taste
  • Salt, To Taste (optional)

Directions

    Mix all ingredients together and refrigerate for several hours before using.

    Note: this will keep in the refrigerator for weeks. If you don't need to watch salt too carefully, add a couple of tablespoonfuls of reduced sodium soy sauce, tamari, or Braggs. Sometimes I add a teaspoon of Italian seasoning or a tablespoon or two of lemon juice.
