- 1 1/2 lb. beets
- 1/2 c. water
- 1/2 c. sugar
- 1 tsp. sea salt
- 1 tsp. white pepper
Directions

1In a stainless steel pan, mix vinegar, water, sugar, salt and pepper; boil for 2 minutes.

2Peel and thinly slice beets and place in a bowl.

3Cover with hot vinegar; allow to cool and refrigerate. Stir every 6 hours.

4Prepare at least 12 hours in advance.

5Makes 2 cups.
