- 1 Tbsp. rice vinegar
- 1 Tbsp. olive oil
- 1/4 tsp. dried dill weed
- 1 clove garlic, minced
- 2 lb. fresh broccoli
- red cabbage leaves
- fresh dill sprig (optional)
- pimiento strips
Directions

1Combine vinegar, olive oil, dill weed and garlic in a medium bowl, stirring well with a wire whisk.

2Set aside.

3Trim large leaves from broccoli.

4Remove flowerets and reserve for another use.

5Remove tough ends of lower stalks and discard.

6Wash remaining stalks and cut diagonally into 1/2-inch slices.

7Add 2 cups broccoli slices to vinegar mixture.

8Toss gently to coat. Reserve any remaining slices for another use.

9Cover coated broccoli slices and chill 3 hours.
