Marinated Broccoli Salad

Ingredients

  • 2 to 3 bunches broccoli
  • 1 c. mayonnaise
  • 2 Tbsp. vinegar
  • 5 to 6 slices bacon, fried crisp and crumbled
  • 1 red onion
  • 1/2 c. sugar
  • 1 small pkg. mushrooms (optional)
  • handful of raisins (optional)

Directions

    Cut broccoli into small flowerets and combine with thinly sliced onions, bacon, mushrooms and raisins.

    Combine mayonnaise, sugar and vinegar and pour over vegetables; stir to coat.

    Cover and refrigerate until chilled and seasoned through.

    Can set overnight.

    Stir before serving.

    Be aware that the longer the salad sets, it will reduce considerably in volume.

    I usually double or triple the amounts when making the salad for the smorgasbords.
