Marinated Carrots

  • 5 c. (2 lb.) sliced carrots
  • 1 medium sweet onion
  • 1 can tomato soup
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. prepared mustard
  • 3/4 c. vinegar
  • 1 green pepper
  • 1 c. sugar
  • 1/2 c. oil
  • 1 Tbsp. salt and pepper

    Boil carrots 5 minutes.

    Let stand in boiling water for 10 minutes.

    Remove from heat; drain and cool.

    Cut onion and green pepper in slices; mix with cooled carrots.

    Mix other ingredients together and pour over carrots.

    Cover and marinate for 12 hours. Refrigerate.
