Marinated Carrots

  • 5 c. sliced carrots
  • 1 medium onion
  • 1 small green pepper
  • 1 can tomato soup
  • 1/2 c. salad oil
  • 1 tsp. mustard
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. Worcestershire sauce
  • 1 c. sugar
  • 3/4 c. vinegar

    Cook carrots until crisp and tender. Drain.

    Set aside to cool.

    In a 2-quart container, cut onion and pepper into thin round slices. Add cooled carrots. Set aside.

    In a medium mixing bowl, combine soup, oil, mustard, salt, pepper, Worcestershire sauce, sugar and vinegar.

    Mix well and pour over vegetables. Stir lightly to make sure all vegetables are coated.

    Marinate in refrigerator for 12 hours or more.
