- 4 Tbsp. butter or margarine
- 1 medium onion, chopped
- 1 c. bread crumbs
- 1 lb. crab meat
- 3 eggs, beaten
- 1 tsp. salt
- 1 tsp. dry mustard
- 4 Tbsp. chopped parsley
- 1 small pt. heavy cream
- 1 c. flour
Directions

1Melt the butter in a skillet and cook the onion until just transparent.

2Add the crumbs and blend well.

3Mix with the crab meat, beaten eggs and seasonings.

4Add just enough cream to hold the mixture together.

5Shape into large flat cakes.

6Roll each cake in flour and fry in butter or oil until nicely brown and cooked through.
