Marinated Carrots

Ingredients

  • 2 lb. carrots
  • 2 green peppers
  • 1 large onion
  • 1 can tomato soup
  • 1 c. sugar
  • 1/2 c. oil
  • 3/4 c. vinegar
  • salt and pepper

Directions

    Peel and slice carrots.

    Parboil to crisp, yet tender.

    Drain the carrots and add to them sliced peppers and onions.

    Heat to warm the tomato soup (undiluted), sugar, oil, vinegar, salt and pepper.

    Pour mixture over carrots and refrigerate overnight.
