Ingredients

  • 1 can tomato soup
  • 1/2 c. vinegar
  • 1/3 tsp. mustard
  • 1 tsp. salt
  • 1/4 to 1/2 c. sugar to taste
  • 5 c. carrots, chunked
  • 1 to 2 onions, chopped
  • 1 green pepper, chopped
  • 1 stick margarine

Directions

    Use a 1 quart can of cooked carrots or cook your raw carrots until tender.

    Layer carrots, raw pepper and onion in a dish.

    Set aside.

    Heat tomato soup, vinegar, sugar, salt, mustard and margarine.

    Mix well.

    Pour this over your carrots and marinate overnight.

    Heat and serve.
