- 2 lb. carrots, sliced
- 1 medium-size onion, chopped
- 1/2 green pepper, diced
- 1 (10 1/2 oz.) can tomato soup (undiluted)
- 1/2 c. vinegar
- 1/2 c. salad oil
- 3/4 c. sugar
- 1 Tbsp. prepared mustard
Directions

1Cook carrots until tender in small amount of water; drain. Combine carrots, onion and green pepper; set aside.

2Combine soup, vinegar, salad oil, sugar and mustard.

3Stir until well mixed. Pour over vegetables.

4Toss lightly with a fork.

5Refrigerate overnight.

6Yields 8 servings.
