- 3 bunches fresh carrots
- 1 tsp. salt
- 3/4 c. vegetable oil
- 1/4 c. vinegar
- 1 tsp. sugar
- 1 tsp. grated onion
- 3/4 tsp. salt
- 1/4 tsp. paprika
- 1/4 tsp. dry mustard
- 6 stuffed olives
- 2 green onions, chopped
- 1 Tbsp. pickle relish
- 1 Tbsp. minced parsley
- 1/2 tsp. capers
Directions

1Cut carrots in diagonal slices.

2Cook with 1 teaspoon salt for 10 minutes; cool.

3Combine oil, vinegar, sugar, onion, 3/4 teaspoon salt, paprika and dry mustard; blend in blender.

4To dressing, add olives, onions, relish, parsley and capers.

5Mix and pour over carrots.

6Chill overnight.

7Serves 6 to 8.
