Marinated Carrots

Ingredients

  • 2 lb. fresh carrots, cleaned and sliced
  • 2 medium onions, thinly sliced into rings
  • 1 medium green pepper, cut into thin strips
  • 1 can condensed tomato soup
  • 3/4 c. vinegar
  • 2/3 c. sugar
  • 1/2 c. Crisco oil
  • 1 tsp. Worcestershire sauce
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt

Directions

    Cook carrots in boiling water with salt, about 8 to 10 minutes.

    Drain, combine with onions and peppers in large bowl. Stir together remaining ingredients.

    Refrigerate several hours. To serve:

    Drain marinade and save.

    Serve carrots in lettuce lined bowl.

    If desired, return leftovers to marinade.

    Marinade can be reused.
